Hey Michael - the dough sounds right - try putting it in a cold over with a bowl of boiling hot water - yeast needs to be warm and humid to rise the best. I have never had success with yeast so it is tricky. I have a recipe for a yeast less pan pizza dough which you could try. Will send it via gmail
